Whole 30 On A Budget - Week 1

Last summer my husband and I successfully completed our first Whole 30. We felt great and were ready for the re-introduction period, but that's where we failed. We didn't follow the guidelines for re-introduction and slowly started adding some old favorites back into our diet and before we knew it we were right back into our old routine. Fast food, sweets, processed foods... all the stuff we love, but wish we didn't. I tried several times (okay, maybe like two) to complete another whole 30 without success. A friend of mine, Rebecca Renfrow, asked me to join her on her Whole 30 and join her accountability group on Facebook and I gladly accepted. This is exactly what I needed! So, I decided to make this time around a challenge to stick to my weekly grocery budget and in doing so I can share with you how it is possible to eat healthy on a budget.

Breakfast- Eggs, Chicken Apple Sausage or Ground Beef with veggies, fruit OR Monkey Salad (Banana, almond butter, cashews and coconut flakes)
Lunch- Tuna Salad Lettuce Boats, Chicken Salad, Turkey Burger, Leftovers
Dinner- Ribs with Potatoes and Broccoli, Amish One-Pot Cabbage Skillet, Cilantro Lime Chicken Soup, Chili, Buffalo Ranch Chicken Stuffed Peppers with Avocado, Zuppa Toscana (most of these recipes can be found on my Whole 30 Pinterest Board.)
Snacks- Fruit, Nuts, Veggies with Dump Ranch, Lara Bars, Boiled Eggs

If you notice, we did not have any meat on our list of groceries. This is because each week, before we make our shopping list, we shop our pantry, fridge and freezer first and we had a good inventory of meat from past purchases. I will do the same thing this week, and I already notice that we had some fresh food leftover that will carry us through a few meals this week, that will give us some room for meat purchases. So, that is the conclusion of week 1 and how we stuck to our budget.
